Oriental cold noodle salad
Ingredients
- 1 lb thin spaghetti
- 1/2 cup roasted sesame oil
- 5 tbs sesame tahini
- 2/3 cup peanut butter
- 3 tbs white vinegar
- 5 tbs Szechuan Garlic Pepper Sauce
- 2 tsp red pepper flakes
- 1 tbs chopped crystallized ginger
- 6 tbs sugar
- 1 cup chicken broth
- 1 cup soy sauce
- 1 tsp ground black pepper
- 1 large cucumber peeled seeded, grated and drained
- 1 bunch scallions sliced fine
Method
Cook the noodles according to package directions, drain and dump into a pot
full of cold water. Drain again well. Mix the now cool noodles with the 3/4 of
the sesame oil, cover, and refrigerate for an hour or so.
Combine the tahini, peanut butter, vinegar, Pepper
Sauce, chiles, ginger, sugar, chicken broth, soy sauce, rest of the sesame oil,
and ground black pepper. Wisk until smooth. Add the cucumber and
scallions, mix well. Add the cold noodles, toss well, and serve. Keep it
cold if not serving immediatly. You will have to remix if it has sat for awhile.
An interesting option is to chop 2 tbs of celantro leaves and mix that in at the
end.
